The role of Sous Chef
The role of Sous Chef is a hands on challenging one, and therefore experience in this role in a similar type of establishment is essential at 5* fine Dining or a Restaurant at upper level of 3 AA Rosette standard as execution of the fine detail is paramount to the role here.
Professionalism, energy and enthusiasm, adaptability, excellent communication skills and creativity will be just some of the attributes you will need to be successful in this role.
All applicants require expert knowledge in all areas of the Kitchen and will be part responsible for the team leadership and training, planning and execution of the menus, including The Falls and lounge/Bistro menus in conjunction with the Exec Chef.
The successful candidate must be able to demonstrate that they are flexible, organise and able to coordinate a variety of activities working with fresh ingredients sourced locally whilst ensuring that the HACCP requirements and the hotels high standards are maintained at all times.
We have an all-day lounge/ bistro menu and an afternoon team menu in the Sun Lounge and outdoor terrace. We also have a fine dining evening menu rich in local produce in The Falls Restaurant, which gives a real taste of south west Ireland and the Wild Atlantic Way. We cook seasonally here matching the ever-changing menus to the seasons of the year. We use as much local produce as we can and we strive to create our dishes from this produce.
This role comes with an apartment on the Estate.
